Our favourite slow cooker meal at the moment is our rendition of this slow cooker Beef Rendang with Turmeric Brown Rice⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀
Slow and low to protect and maintain nutrients 👌🏼⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 2kg beef brisket, trimmed⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 2 tbsp extra virgin olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 2 cup water⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/4 cup rendang paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 2 tbsp extra virign olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 cup shredded coconut⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 800ml coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 2 tbsp fish sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1 tbsp brown sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 80g baby spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 700g brown rice, microwavable sachets⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 3 tsp finely grated fresh turmeric ⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 cucumber thinly sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/4 bunch mint leaves, picked⠀⠀⠀⠀⠀⠀⠀⠀⠀
* 1/2 cup greek yoghurt⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Prepare brisket by heating oil in a pan and cook brisket for 2 minutes each side until browned. Add 2 cups of water to slow cooker and add brisket. Cover and place on low heat setting 6-8 hours or high for 4 hours. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

When soft and pulling apart, remove from slow cooker and shred with fork ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make the sauce, heat oil in a large saucepan over medium heat. Add rendang paste and cooking for 3 minutes or until fragrant Add coconut and cook for 2 minutes. Add coconut milk, sugar, fish sauce and 1/2 cup of water. Bring to a simmer and add beef simmering and stirring occasionally for 5 minutes. Stir through baby spinach until wilted.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Meanwhile prepare turmeric rice by microwaving brown rice according to packet instructions. Add turmeric and stir until well combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Divide rice among bowls and top with beef, cucumber, mint and yoghurt and enjoy!
