A vegan, gluten free, dairy free, refine sugar free (but not fun free 😉) passionfruit and coconut slice.
Ingredients
1 cup cashews
1 cup coconut milk
1/2 cup melted coconut oil
1/4 maple syrup
3/4 desiccated coconut
2/3 passionfruit pulp (approx 10 passionfruit)
Nut Base
1/2 cup cashews
1/2 cup macadamias
1 cup dessicated coconut
2 tbsp coconut oil
1 tbsp maple syrup
Method
‣ To make the base, blend cashews, macadamias, coconut, coconut oil and maple syrup in a food processor until smooth. Press into the base of a small (20cm x 20cm) baking tin lined with baking paper and refrigerate for 20 minutes
‣ Place cashews, coconut milk, coconut oil, maple syrup and coconut in food processor and process for 3-4 minutes or until smooth and creamy. Pour mixture over the base and refrigerate for 40 minutes or until set
‣ Drizzle passionfruit pulp over the filling and refrigerate for 2 hours or until set.
‣ Cut into small squares and enjoy!
