Passionfruit and Coconut Slice

So get your teeth into this delicious snack 😍

A vegan, gluten free, dairy free, refine sugar free (but not fun free πŸ˜‰) passionfruit and coconut slice.



Ingredients

  • 1 cup cashews

  • 1 cup coconut milk

  • 1/2 cup melted coconut oil

  • 1/4 maple syrup

  • 3/4 desiccated coconut

  • 2/3 passionfruit pulp (approx 10 passionfruit)

Nut Base

  • 1/2 cup cashews

  • 1/2 cup macadamias

  • 1 cup dessicated coconut

  • 2 tbsp coconut oil

  • 1 tbsp maple syrup

Method

β€£ To make the base, blend cashews, macadamias, coconut, coconut oil and maple syrup in a food processor until smooth. Press into the base of a small (20cm x 20cm) baking tin lined with baking paper and refrigerate for 20 minutes

β€£ Place cashews, coconut milk, coconut oil, maple syrup and coconut in food processor and process for 3-4 minutes or until smooth and creamy. Pour mixture over the base and refrigerate for 40 minutes or until set

β€£ Drizzle passionfruit pulp over the filling and refrigerate for 2 hours or until set.

β€£ Cut into small squares and enjoy!
