Ingredients
๐๐ผ Approx 2kg of bones (grass fed beef marrow, lamb bones left over or chicken carcass)
๐๐ผ 3-4 litres water
๐๐ผ 1/2 cup Apple cider vinegar
๐๐ผ 2 onions coarsely chopped
๐๐ผ 3 carrots coarsely chopped
๐๐ผ 1 parsnip coarsely chopped
๐๐ผ 4 celery stalks coarsely chopped
๐๐ผ 2 leeks coarsely chopped
๐๐ผ 3 garlic cloves
๐๐ผ Small handful of fresh thyme ๐๐ผ 2 bay leaves
๐๐ผ Salt and pepper to taste ...
Method
1๏ธโฃ Place bones in large pot and cover with water and vinegar. Let stand for 1 hour
2๏ธโฃ Add all other ingredients to the pot and bring the boil
3๏ธโฃ Reduce heat and simmer for approx 8-12 hours. Strain into a large bowl. (If you have a slow cooker, leave on low cooking all day).
4๏ธโฃ Cool and throw away chunks of fat. Then freeze in portions or store in fridge for up to 4 days.
